Sponge candy

The local name for chocolate-enrobed honeycomb toffee, with a light, rigid, almost foamy interior that shatters and melts in the mouth. It is strongly identified with Western New York (especially Buffalo, where Fowler's and Watson's are institutions), and to a lesser extent Milwaukee, St. Paul, and northwestern Pennsylvania. Elsewhere the same candy goes by names like 'seafoam' or 'fairy food', but in Buffalo it is only sponge candy.
