A Western North Carolina breakfast meat made from pork liver, scraps from pig heads, cornmeal, sage, and black pepper, set into a loaf and sliced thin for frying until crisp on the outside. It descends from the Pennsylvania Dutch 'pon hoss' that German settlers carried south through Appalachia in the 1700s, and got cheap and popular during the Great Depression. Shelby, NC is the production hub and even hosts an annual Livermush Festival; Mack's and Jenkins are the major brands.
